Friendship Soup

Here is the recipe for the soup in a jar that we made. That was so fun. If you gave your soup away you have to make some for your family...it is so yummy and makes a ton.

Friendship Soup Mix in a Jar
SUBMITTED BY: Bea PHOTO BY: Spicy Italian
" INGREDIENTS (Nutrition)
• 1/2 cup dry split peas
• 1/3 cup beef bouillon granules
• 1/4 cup pearl barley
• 1/2 cup dry lentils
• 1/4 cup dried onion flakes
• 2 teaspoons dried Italian seasoning
• 1/2 cup uncooked long-grain white rice
• 2 bay leaves
• 1/2 cup uncooked alphabet pasta
DIRECTIONS
1. In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
2. Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

Nutrition night

Thanks for all who came to our class on Nutrition last night. Erin did an excellent job teaching us about good health. We learned how to properly feed our families, infants, nutrition during pregnancy, proper steps for weight loss and how to eat healthy and follow the Canadian Food guide. It was really fun and a big thanks to Erin for her time. Erin gave us a recipe that is her families favorite and is very healthy and quick to make. I will post it and I have a favorite that I will post as well. If any of you have a healthy meal that you want to share you can contact me and I will post it on our site.

7 seas Casserole

2 cans of cream of mushroom soup
2 2/3 cup water
1 t lemon juice
1/4 t salt
1/8 t pepper
2 2/3 c minute rice
1 can tuna
1 cup of frozen peas

Mix soup, water, lemon juice, salt and pepper in pot and bring to boil. Pour 1/2 soup mixture in bottom of casserole dish. Alternate 3 layers of rice, peas, tuna. Poor remaining soup over rice. Cover with 1 c cheese. Bake 350 degrees for 20 min. After 10 min take out and stir.

From Erin Dudley

Spinach Smoothie ( Shrek drink)

Blender full of fresh spinach
16 ice cubes
3/4 cup of soy milk ( I use regular milk if I don't have soy)
1 frozen banana
1/4 can of frozen pineapple juice.

This is a bright green smoothie and if I tell me kids it is a Shrek drink they drink it no problem. They actually love them and have them all the time. They taste so good.
